Wouldn't some beef stew be great for dinner?

But you've just got home from shopping, or picking up the kids from school, or you've all been sledding and now you need a fast dinner. What about a quick beef stew?  But wait a minute, there is no such thing as quick beef stew………at least hours are needed to make it. The beef  would had to have been in the crock pot.

Au contraire, mon ami! Im Gegenteil, meine Liebe!  Not when you have been busy and planned ahead and have your beef already canned and waiting in the pantry! Talk about efficiency!

Once we just had sandwiches. Open a jar of my roast beef, shred it with a fork, and get a bun ready. That's all there is to it. Well, you could always warm it up in the microwave. But me, I like it cold.

I used just a pint of my canned beef. All I needed to do was to pull it out of the jar and dice or chop it up into smaller pieces. I had canned large chunks, but you will need to shred it a little or cut it into smaller bite-sized pieces.

I used my CC Boards – 3-Piece Nonslip Cutting Board Set with Paddle which has the nice grove to collect any broth or gravy draining from the beef. And afterwards, it can go in the dishwasher with everything else.

If you are one of the Great Kitchen Goddesses who has the canned corn and peas or even potatoes, you can open  jars of those. As for me, I am not that good yet, just a "goddess in training" so I have frozen corn and peas, and I quickly peeled some potatoes and onions and diced them up. Shred some carrots or just dump some from a bag ready in the fridge .

Season your stew as you like, maybe garlic, salt , pepper. I like to add a little McCormick Brown Gravy Mix.  I have the broth from the canned beef, but I usually add approximately  1/4 cup to the broth so that I have a thick stew broth.

If you like tomatoes in your stew ( and I do sometimes), this gravy broth blends well with the tomato flavors and gives your broth an even richer look. I add either petite diced tomatoes or just tomato sauce or paste, whatever I have on hand. I know most of you ladies have rows of home-canned tomatoes so there you go!

Simmer it for just a short time, enough to soften the potatoes, and pop some rolls in the oven and dinner will be ready by the time everyone gets changed. And picks up all the mess of snowsuits and boots, right?

Just a quick meal of stew made from home canned beef and vegetables if you have it.

Ingredients

  • 1 pint jar canned beef roast, chopped or shredded, keep liquid for stew
  • Canned or frozen vegetables of choice:
  • pint of corn, peas, potatoes, tomatoes ( all of these or your choice)
  • 1/2 cup diced onions or more
  • 1 cup shredded carrots
  • 1/2 cup diced celery
  • up to 1 pint beef stock
  • 1/4 cup or more McCormick Brown Gravy Mix
  • salt, pepper, garlic to taste

Instructions

  1. Chop or shred beef and put in large cooking pot
  2. Add all the vegetables and any broth/stock
  3. Stir in gravy mix.
  4. Let simmer until thickens and potatoes are done.( If you started them raw)
  5. If all veggies were canned, just simmer until rolls are baked and it's ready!
